Brookings

Ken and I were able to make a trip out to the coast on Thursday and Friday. Ken's mom and her new husband, Jim came and stayed with the kids. I know it was a lot of work for them and I felt guilty being away while they were watching the kids - so I appreciate it that much more.


It was a beautiful two days on the coast. The sun was shining, the skies were clear, and it's always so relaxing to me just to sit and listen to the waves come in. But I have to admit my favorite part of being there. Cardiology Consultants has a satellite clinic in Brookings. They have a physician travel out weekly to see patients. I was able to sit back in the office and work on the computer while Ken worked. I think he saw 8 or 9 patients each day (Thursday and Friday). As I sat and worked on Grandma's Shutterfly album, I was able to hear Ken working. I loved the way he greeted his patience, how he listened to them carefully and would explain to them in easy terms what was going on and what they needed to do. Then he would come in and fill out his paperwork and then dicate for the chart. It was just really neat to see him in action and see what a great doctor he is. I already knew that, but it was fun to see.


I have such a great husband. He truly loves the Lord and the gospel. I am impressed with his thirst of knowledge and his ability to read and learn things that seem very unentertaining to me. He is good at everything he does. He is quick and efficient and doesn't waste time. He works hard so he can come home and be with his family. He is loving and kind and a wonderful husband and father. I am so happy that God led us to each other and allowed us to take care of 6 of his wonderful children. I love my incredible husband and am very happy he loves me too!

My Thoughts on HEALTH and NUTRITION

The above slide show depicts the changes over the past 20 years in the percentage of Americans who are obese. During the past 20 years there has been a dramatic increase in obesity in the United States. The slide set illustrates this trend by mapping the increased prevalence of obesity across each of the states. In 1985 most of the states had a percentage of <10%.>25%. So why the change? What has brought on this increase in our nation? Here are my thoughts.

1. TECHNOLOGY
The 80s and 90s brought computers and game consoles to the world. Outside work and play have been replaced by many hours in front of the computer and electronic games. This has led to a nation that is much less active than before.

2. DIET FADS
The 80s is characterized by the LOW-FAT diet craze. If you ate things that were LOW-FAT you weren't supposed to "get fat." The food guide pyramid was taught. It focused on eating large amounts of grains (6-11 servings of bread, cereal, rice & pasta a day). Other diet fads have been the "low calorie diet" and the "Adkins" or low-carb diets. These diet fads have changed the way people think "healthy" eating should be.

3. EASY/PROCESSED FOODS
Our nation now has a "get it quick and get it now" mentality. Fast food restaurants are abundant and very accessible. The less time it takes to make or get our food, the better.

I feel that the three of these areas combined have led to an increase in obesity in our nation. SO NOW WHAT?
